CHICKPEA SALAD WITH CAPERS AND DILL

“Chickpea of the Sea” is how Karoline Boehm Goodnick titled her recipe which appeared in the Boston Globe Wednesday food section. There are lots of recipes with this title around the internet food world. My preference is not to title vegan/vegetarian recipes with their non vegan/vegetarian proposed “taste-alikes.”( I thought I made this word up and was very proud, but I discovered that although it’s not in Websters, it is in common usage). In my previous meat eating life, I’ve often been sorely disappointed with “taste-alikes.” Nevertheless this Chickpea Salad With Capers And Dill may meet the test. I would even go as far to say that it’s better than tuna salad which always left an undesirable aftertaste in my mouth even thought I enjoyed the eating of it enormously.

Chickpea Salad with Capers and Dill

A taste-alike for tuna salad, this chickpea salad meets the test of deliciousness. Inspired by Chickpea of the Sea created by Karoline Boehn Goodnick for the Boston Globe, I have adapted this recipe by substituting vegan mayonnaise.

Ingredients

  • 1 (15) ounce can chickpeas drained and rinsed
  • 2 celery ribs finely chopped
  • ½ onion finely chopped
  • 1 lemon
  • 1 Tablespoon capers chopped
  • 1 ½ teaspoons dill fresh or substitute ½ teaspoon dried dill
  • cup vegan mayonnaise
  • 1 Tablespoon Dijon mustard Maille, if possible
  • ¼ teaspoon celery salt
  • salt and pepper, to taste
  • fresh greens of your choice

Instructions

  • In a medium bowl, mash the chickpeas with a fork or potato masher until the chickpeas are broken up.
  • Add the celery and onions and stir to combine.
  • Zest and juice the lemon.
  • In a small bowl, combine the lemon juice, lemon zest, capers, dill, vegan mayonnaise, mustard, celery salt, and salt and pepper to taste. Mix well. Fold the dressing into the chickpea, onion and celery mix. Taste for seasoning.
  • Serve over fresh greens of your choice.

For this Chickpea Salad With Capers and Dill recipe you’ll need

  • 1 (15 ounce) can chickpeas or 1 ½ cups cooked chickpeas
  • 2 ribs celery
  • ½ onion
  • 1 lemon
  • ⅛ cup vegan mayonnaise, either store-bought or prepared from scratch
  • 1 Tablespoons Dijon mustard
  • 1 Tablespoon capers
  • 1 ½ teaspoons fresh dill or ½ teaspoon dried dill
  • ¼ teaspoon celery salt
  • salt and pepper, to taste

Mash the chickpeas with a fork or potato masher in a medium bowl. A potato masher will get the job done faster. Finely chop the celery and onions and add them to the chickpeas. Zest and juice the lemon, chop the fresh capers and dill and add them with the remaining ingredients to a small bowl. Stir well and then fold the dressing into the chickpea, onion and celery mixture.

Chickpeas, Canned Or Cooked From Scratch?

I prefer to cook my chickpeas from scratch. Besides being a cheaper alternative to canned, chickpeas from scratch do not have the salt and other added ingredients that some canned varieties do. Until I post a recipe for cooking chickpeas, you can find many blog posts online to walk you through the process. I always make more chickpeas than I need and freeze the rest. There are various methods to cook them, but they all take some time, and when you’re in a rush you want to have all of your ingredients handy. To freeze chickpeas, allow them to cool and then transfer them in a single layer to a sheet pan. Place the sheet pan in the freezer until the chickpeas have frozen. Then transfer them to a freezer storage container for easy access in the future.

Zesters

If you don’t own a zester, check in here for an article on alternatives. I couldn’t live without my zester shown in the picture above. The zest of fruits add beautiful color and added flavor to your dishes. Whether you use a zester or an alternative, watch out not to add any of the white pith just under the bright skin of the fruit. It has a bitter taste.

Dill, Fresh or Dried?

I always opt for fresh dill over dried in this recipe for the brightness of flavor. The general rule for conversions is to use 3 times the amount of fresh herbs to dried herbs. So in this recipe, you would use ½ teaspoon dried dill or 1 ½ teaspoons fresh dill. You can certainly always adjust the amount to your own taste.

If you don’t grow your own fresh herbs, one of the problems is that you will almost always have leftovers that you may not be able to use right away. To save those leftover fresh herbs for later, chop them, place them in a freezer safe container and freeze until you need them again.

Vegan Mayonnaise

There are several varieties of vegan mayonnaise available at supermarkets these days. While it’s great to have the convenience of supermarket varieties, they often have many added ingredients. I hope to add a recipe for vegan mayonnaise here soon so stay tuned. In the meantime you’ll need to do a taste test on the variety that you choose. The tastes can vary and can significantly affect the outcome of your recipes.

Dijon Mustard

As I said regarding vegan mayonnaise, the taste of supermarket condiments can vary significantly from brand to brand. Make sure your dijon mustard measures up to your own personal taste test. I always buy Maille.
