EVERYONE LOVES STRAWBERRY NICE CREAM!

Strawberries are the near perfect fruit to me. Plump, juicy, colorful and delicious, they evoke the spirit of summer. When they’re at their peak ripeness in local farmers markets, they are perfect for this Strawberry Nice Cream. Of course they’re great for regular ice cream too, but the difference here is we’re leaving out the diary and sugar and whipping it up quickly in a food processor instead of an ice cream maker. Because it goes so quickly and is such a healthy treat, it’s a great activity for bringing children into the kitchen to enjoy the process. The soft serve consistency is irresistible.

Strawberry Nice Cream

Plump, juicy strawberries, ripe sweet bananas and non-dairy milk combine to make this super delicious healthy summer treat-Strawberry Nice Cream!

  • Sheet pan
  • Food processor with blade attachment
  • Rubber Spatula

Ingredients

  • 1 pound strawberries hulled and cut in half
  • 1 ripe banana sliced into ½ inch rounds
  • teaspoon kosher salt
  • cup non-dairy milk such as almond, cashew or soy

Instructions

  • Place the strawberries and bananas on a sheet pan and freeze until solid about 4 hours.
  • Once completely frozen, add the strawberries, bananas and salt to the bowl of a food processor fitted with a blade attachment.
  • Pulse until the fruit starts to break down
  • Scrape down the sides and bottom with a rubber spatula.
  • Continue to process until the fruit is fully blended.
  • Slowly add the non-dairy milk through the feed tube of the processor and continue processing until the mixture is smooth and creamy. If you prefer a sweeter nice cream, add a tablespoon of honey or maple syrup with the non-dairy milk.
  • Serve immediately or if you prefer a harder consistency, transfer it to a freezer safe air tight container and freeze. You may need to allow the nice cream to sit on the counter for a few minutes to soften slightly depending on the length of time that it has been frozen. My experience is that the frozen version is icier than the super creamy nice cream right from the food processor.

You’ll need the following ingredients for this Strawberry Nice Cream…

Strawberries 1 pound
Banana-1 ripe Make sure your banana is very ripe.
Kosher salt
Non-dairy milk such as almond, cashew or soy-⅔ cup

Let’s Get Going…

Place the strawberries and bananas on a sheet pan and freeze until solid about 4 hours. You can do this step ahead of time and whip up the Nice Cream in less than 10 minutes. You can also skip this step by using prepackaged frozen fruit.

Once completely frozen, add the strawberries, bananas and salt to the bowl of a food processor fitted with a blade attachment.

Pulse until the fruit starts to break down.

Scrape down the sides and bottom with a rubber spatula.


Continue to process until the fruit is fully blended.


Slowly add the non-dairy milk through the feed tube of the processor and continue processing until the mixture is smooth and creamy. If you prefer a sweeter nice cream, add a tablespoon of honey or maple syrup with the non-dairy milk.

Strawberry Nice Cream Processed

Serve immediately or if you prefer a harder consistency, transfer it to a freezer safe air tight container and freeze. You may need to allow the nice cream to sit on the counter for a few minutes to soften slightly depending on the length of time that it has been frozen. My experience is that the frozen version is icier than the super creamy nice cream right from the food processor.

    OMG!!!! Was this delicious, I couldn’t believe how great this recipe turned out . Having guests for a summer lunch tomorrow and wanted to test this recipe out before . I definitely will be making this for the lunch and many more times to follow . Guess I won’t have to go to the ice cream stand for the rest of the summer, that’s how good this is .
