Are you trying to add more dark leafy greens to your diet or the diets of your children? Of course, salads are a great way to enjoy these vegetables, but for many whose taste buds are not acclimated to these amazing flavors, a smoothie can offer a transition point to move in the direction of adding more dark leafy greens to your diet. This Greenish Smoothie is a delicious and healthy way to start your day!

As nutritional powerhouses, dark leafy greens are an important part of a healthy diet. They are high in many nutrients including vitamin A, vitamin C, antioxidants, fiber, folate, vitamin K, magnesium, calcium, iron, and potassium. Studies show that they may slow age-related cognitive decline, reduce the risk of diseases such as cardiovascular disease and cancer, promote healthy bones and reduce inflammation. Options include kale, collard greens, spinach, arugula, bok choy, watercress, swiss chard, turnip greens and watercress. Try them all!

You can find lots of dark leafy greens at your local grocery store or farmer’s market, but if you’re looking for convenience, you can choose pre-packaged varieties in the produce or freezer sections of the grocery store.

A smoothie can offer a transition point to move in the direction of adding more dark leafy greens to your diet. This Green(ish) Smoothie is a delicious and healthy way to start your day!

  • High speed blender

Ingredients

  • 2 cups non-dairy milk almond, cashew, soy, oat for example
  • 2 cups frozen mixed berries
  • 1 ripe banana
  • 2 cups spinach or other greens of your choice such as kale, collard greens,, swiss chard or a mix
  • flax seed, chia seed, non-dairy yogurt optional add-ins for additional protein

Instructions

  • Place all of the ingredients in a high speed blender and blend until smooth.

You’ll need the following ingredients for this Greenish Smoothie…

  • 2 cups non-dairy milk-almond, cashew, soy or oat for example
  • 2 cups frozen mixed berries
  • 1 ripe banana
  • 2 cups spinach or other greens of your choice such as kale, collard greens, swiss chard or a mix
  • flax seed, chia seed, non-dairy yogurt-optional add-ins for additional protein

Add all of the ingredients to a high speed blender and blend until smooth. If you prefer an icier smoothie, add a cup of ice before blending.

Things you might like to know about this Greenish Smoothie…

A ripe banana is a must for this recipe as it brings natural sweetness to the smoothie. An unripe banana will taste bitter and be waxy in texture. I prefer very ripe bananas in my smoothies . When they’ve reached the point on my countertop when no-one will eat them from the skin, I chop them into pieces, place them in a freezer safe container and store them in the freezer for quick and easy smoothie making.
