You might have noticed that my recent blog posts have been focused on anxiety and stress reduction. One part of the anxiety/stress solution is a balanced, healthy diet. But there are specific ingredients that are thought to be particularly helpful in combating stress. This recipe contains at least three of these super stress-reducing foods: oats, chocolate, and nuts. If you top it off with some fresh berries, that’s 4 stress boosters to start your day.

And in addition to the stress reducing qualities, there are many other health benefits of eating oatmeal.

Oats contain beta glucan, a type of soluble fiber that helps to lower blood glucose and cholesterol levels thereby reducing the risk of heart disease and diabetes. Eating oats can also foster healthy gut bacteria and intestinal health. Additionally eating oatmeal regularly can help with weight loss because the fiber and protein content allow you to stay full longer. Oats are also loaded with many vitamins and minerals, including magnesium, copper, thiamine and zinc.

  • 1 jar or container with a tight fitting lid
  • 1 table or soup spoon

Ingredients

  • 1 cup non-dairy milk such as cashew milk, soy milk or oat milk
  • ½ cup gluten-free old-fashioned rolled oats
  • 1 Tablespoon nut butter such as almond butter or peanut butter
  • 1 Tablespoon unsweetened cocoa powder
  • ½ cup mashed ripe banana
  • ½ teaspoon vanilla extract
  • 1 Tablespoon chopped nuts such as almonds, walnut or pistachios

Instructions

  • In a jar or container with a tight-fitting lid, add the non-dairy milk, rolled oats, nut butter, cocoa powder, mashed ripe banana, and vanilla extract. Stir until the ingredients are well combined.
  • Cover the jar or container and place it in the refrigerator overnight.
  • Remove the jar/container from the refrigerator and stir the ingredients well. If desired, add a splash of additional non-dairy milk to adjust the consistency.
  • Stir in the chopped nut and serve immediately.

If you want to warm your oats…

Overnight oats are usually enjoyed cold. However, if you prefer a warm breakfast, you can heat them in a microwave or on the stove top. Add the nuts and any other toppings after heating. Follow these instructions:

If heating in the microwave, place the overnight oats in a microwave-safe bowl. Stir in a tablespoon or two of water or non-dairy milk. Heat at 30-second intervals until the oats reach the desired temperature. Stir after each 30 second interval.

If heating on the stovetop, add ¼ cup water or non-dairy milk to a saucepan. Heat the liquid to boiling, reduce the heat to medium-low and stir in the oatmeal. Stir continuously until the oatmeal is heated through.
