About me continued… My Health Coach Journey

I’ve had an amazing life so far, and I count my blessings every day.  Nonetheless, as I look back on my life as a young mother, I am aware that I was overweight, unfit and unhealthy.

I was a constant dieter, always trying the next best offer to get back to my pre-pregnancy weight, and always failing(Diets don’t work after all.).  I tried to hide my unhealthy eating from my children so as not to lead them down the same path.

Wanting to provide them with a healthy diet, I lacked the skills and knowledge to make that a daily reality.  When my children asked “What’s for dinner?” they answered themselves with a chorus of “Chicken, Rice and Salad”.(Now, as then, a big family joke)  Although there may be nothing inherently wrong with chicken, rice and salad as a meal, it’s not what you’d call a healthy diet if repeated night after night.

It wasn’t quite that bad in reality, and I always offered fresh fruit and veggies to snack on, but the truth is I really had no idea how to feed myself much less my family for optimal health and well-being.  In addition to not having the faintest idea how to cook, I found the information available about proper nutrition to be confusing and contradictory as it continues to be today.

The increased availability of fast food and convenience food, even more prevalent today, made getting food on the table for a busy, active family easier and even less healthy.

When my children went to college, I finally learned to cook while attending The Cambridge School of Culinary Arts and becoming a Certified Culinary Professional.  I taught cooking classes to children and adults, and although the food that I was preparing and teaching others to prepare was delicious, it was often not meeting the guidelines of what most today would call a healthy diet.

This led me on a journey of self-reflection and discovery.

I began reading extensively about health and nutrition.  After completing an online course on plant-based cooking for professionals at Rouxbe, I began experimenting with a vegan diet, but I learned that it just wasn’t the right fit for my “bio-individuality.”  Although I have continued to eat a whole food plant-based diet, I do now eat a small amount of animal foods which I strive to make grass-fed and organic.

The recipes on my blog are foods that I and my family eat and enjoy.  They were created to provide my readers(YOU) with delicious food that is also healthy and nutritious.

I have recently become an Integrative Nutrition Health Coach after graduating from the Institute for Integrative Nutrition.  The education that I received here, as well as my life’s journey, has led me to a new career in health coaching and wellness advocacy.  You can learn more about IIN here.

It is my belief that every person has their own bio-individual code which dictates what foods will bring them a lifetime of good health and that health is more than just the food that we eat but includes finding balance in all areas of our lives.  It is up to each one of us to find the diet and lifestyle that best provides us with optimal health.  I can help you unlock your bio-individual code and find that balance.

My goal as a health and wellness coach and my sincerest hope is to educate and inspire you to create vibrant health and well-being for yourself and your family NOW so that you have many, many years of happiness, fulfillment and health ahead of you.
