QUICK AND EASY CHANA MASALA

If you’re a lover of Indian food like I am, this Chana Masala is going to be a hit. It has tremendous depth of flavor from the classic ingredients and it only takes 25 minutes from start to finish to go from an idea to dinner on your table.

When I was first learning to cook, I had very few spices in my pantry and I felt overwhelmed by the need to purchase more especially for only one recipe. Over time, I found that having them on hand has a huge payoff as I continued to use them over and over without having to make a trip to the store.

If you’re worried about buying a dried herb or spice that you won’t use again, try a grocery or health food store that carries them in bulk so that you can purchase only a small amount. According to Healthline.com, “Dried herbs and spices don’t truly expire or “go bad” in the traditional sense. When a spice is said to have gone bad, it simply means that it has lost most of its flavor, potency, and color. Fortunately, consuming a spice that has gone bad is unlikely to make you sick.” You’ll find the shelf life of many dried herbs and spices listed in their article here. Of course, to bring out the maximum flavor in your culinary creations, you’ll want to make sure that your dried herbs and spices haven’t lost their color and potency.

Quick and Easy Chana Masala

Equipment

  • Large heavy skillet
  • Wooden spoon

Ingredients

  • 1 Tablespoon extra virgin olive oil
  • 1 cup small dice yellow onion
  • 1 medium jalapeno pepper ribs and seeds removed, minced
  • 1 Tablespoon minced garlic
  • 1 ½ Tablespoons minced fresh ginger
  • 2 teaspoons garam masala
  • 1 teaspoon coriander
  • 1 teaspoon cumin
  • 1 teaspoon tumeric
  • ½ teaspoon chili powder
  • 28 ounces chopped canned/boxed tomatoes undrained
  • 3 cups chickpeas about 2 (14 ounce) cans, rinsed and drained
  • 1 Tablespoon lemon juice freshly squeezed
  • 1 teaspoon kosher salt or to taste
  • ½ teaspoon freshly ground black pepper or to taste
  • freshly chopped cilantro for garnish

Instructions

  • Heat extra virgin olive oil in a large heavy skillet over medium heat.
  • Stir in the onions and jalapeno peppers with a wooden spoon and sauté until the vegetables are soft and translucent.
  • Add the garlic and ginger and continue to stir for 30 seconds.
  • Add the garam masala, coriander, cumin, tumeric and chili powder and stir for about 1 minute or until the spices are fragrant.
  • Add the tomatoes and chickpeas.
  • Bring the mixture to a boil and reduce the heat to a simmer.
  • Continue to simmer gently for 10-15 minutes.
  • Stir in the lemon juice.
  • Season to taste with kosher salt and freshly ground pepper.
  • Garnish with freshly chopped cilantro.

You’ll Need The Following Ingredients For This Quick And Easy Chana Masala…

Extra virgin olive oil-1 Tablespoon
Yellow onion-1 cup small dice
Jalapeno pepper-1 medium
Garlic-1 Tablespoon minced
Fresh ginger-1½ Tablespoons minced
Garam masala-2 teaspoons
Coriander-1 teaspoon
Cumin-1 teaspoon
Tumeric-1 teaspoon
Chili powder-½ teaspoon
Chopped canned/boxed tomatoes-28 ounces
Chickpeas-3 cups or about 2 (14 ounce) cans
Freshly squeezed lemon juice-1 Tablespoon
Kosher salt-1 teaspoon or to taste
Freshly ground black pepper-½ teaspoon or to taste
Freshly chopped cilantro for garnish

Let’s Get Going…

Heat extra virgin olive oil in a large heavy skillet over medium heat.


When the oil is hot stir in the onions and jalapeno peppers with a wooden spoon and sauté until the vegetables are soft and translucent.

Add the garlic and ginger and continue to stir for 30 seconds.

Add the garam masala, coriander, cumin, tumeric and chili powder and stir for about 1 minute or until the spices are fragrant.

Stir in the tomatoes and chickpeas.

Bring the mixture to a boil and reduce the heat to a simmer.

Continue to simmer gently for 10-15 minutes.


Stir in the lemon juice.


Season to taste with kosher salt and freshly ground pepper.


Garnish with freshly chopped cilantro. I used parsley for the garnish because some members of my family do not enjoy cilantro.
