QUICK AND EASY VANILLA COCONUT PUDDING

You can make pudding!!! Who knew?

Have you been snacking on those multi-pack pudding mixes from the grocery store avoiding looking at the ingredients for fear of what you might see? No more, this Quick and Easy Vanilla Coconut Pudding is smooth and creamy, and most of all, it’s loaded with flavor which you won’t find in the grocery snack packs. This pudding comes together quickly, and the only waiting is for cooling. Give it a whirl. Pair it with your favorite fruit or the strawberry compote from last week’s post. It’s strawberry season. Make the most of it.

Vanilla Coconut Pudding

This Quick and Easy Vanilla Coconut Pudding is smooth and creamy, and most of all, it's loaded with flavor that you won't find in the grocery store snack packs.

  • Whisk
  • Medium saucepan
  • Wooden spoon
  • Fine mesh strainer
  • Medium Bowl
  • Rubber Spatula

Ingredients

  • 3 Tablespoons cornstarch
  • ½ cup unsweetened almond, cashew or coconut milk
  • 1 (13 ½ ounce) can full fat coconut milk
  • ¼ cup maple syrup
  • 1 teaspoon vanilla

Instructions

  • In a small bowl, whisk the cornstarch into the almond, cashew or coconut milk until no lumps remain.
  • Combine the coconut milk, maple syrup and vanilla in a medium saucepan.
  • Cook over medium high heat until the mixture comes to a boil. Reduce to a simmer.
  • Give the milk/cornstarch mixture another quick whisk, and slowly pour it into the saucepan with the other ingredients. Stir continuously in a figure eight pattern until the mixture begins bubbling. Continue stirring for another five minutes until the pudding has thickened.
  • Remove from the heat.
  • Pour the pudding through a fine mesh strainer into a medium bowl. Press with a rubber spatula to push through any remaining pudding.
  • Cool slightly
  • Place plastic wrap directly on the surface of the pudding to prevent a skin from forming.
  • Refrigerate for 2 hours.

Vanilla Coconut Pudding Ingredients
  • Cornstarch(3 Tablespoons)
  • Unsweetened almond, cashew or coconut milk(½ cup)
  • Full fat coconut milk 1 (13 ½ ounce) can
  • Maple syrup(¼ cup)
  • Vanilla(1 teaspoon)

Let’s Get Going…

In a small bowl, whisk the cornstarch into the almond, cashew or coconut milk until no lumps remain.

Combine the coconut milk, maple syrup and vanilla in a medium saucepan.

Cook over medium high heat until the mixture comes to a boil. Reduce to a simmer.

Give the milk/cornstarch mixture another quick whisk, and slowly pour it into the saucepan with the other ingredients.

Stir continuously in a figure eight pattern until the mixture begins bubbling. Continue stirring for another five minutes until the pudding has thickened.

Don’t have cornstarch in your pantry?

Cornstarch is a powder ground from corn kernels that is used as a thickener in this recipe. It is naturally gluten free. If you don’t have cornstarch in your pantry and/or you are not following a gluten free diet, you can substitute all purpose flour or other gluten free flours for the cornstarch. Here’s an article on cornstarch and how to make these substitutions. I have only prepared this recipe with cornstarch, so I can’t vouch for the finished product with the alternatives.

Is maple syrup vegan?

Maple syrup comes from the sap of sugar maple trees. It is available in 4 grades based on its color. Grade A is light amber, medium amber and dark amber and Grade B is the darkest syrup available and has the strongest maple flavor. Grade B is usually for baking whereas the lighter grades are drizzled on foods such as pancakes. Read food labels carefully when buying maple syrup to make sure that it is pure and not maple flavored syrup with added ingredients such as corn syrup or refined sugar.

Maple syrup may be vegan, however all products labelled as maple syrup may not be vegan.  Check the label carefully to make sure there are no added ingredients.  

Vanilla

I recommend using pure vanilla for all of your recipes for its complex flavor and health benefits. Imitation vanilla extract is just what it says…”imitation”. It is flavored primarily with synthetically produced vanillin which comes from materials like petroleum to capture the vanilla flavor.
