It’s strawberry season…..one of my favorite times of year for many reasons! There’s nothing like the taste of a fresh strawberry straight from the vine especially after you’ve been consuming those less than tasty berries that have travelled hundreds of miles to get to your plate. And the joy of picking them with little ones at your feet brings the flavor to the next level. Follow this easy Strawberry Compote recipe to bring your freshly picked or farmer’s market fruit to a soft and sweet consistency that is perfect for enjoying in so many ways….

Spread it on toast

Add it to a smoothie

Make it into an ice pop

Pour it over ice cream or yogurt or their vegan alternatives

Swirl it into granola

Spread it on pancakes or waffles

Pour it over pound cake or cheesecake

Add it to a cocktail

Strawberry compote is usually made with processed sugar. This recipe substitutes maple syrup for the processed sugar for a healthier approach. Maple syrup contains some minerals and many antioxidants not found in processed sugar. It has a slightly lower glycemic index than regular sugar, but sugar of all kinds should be consumed in moderation.

Strawberry Compote

Try this quick and easy Strawberry Compote to bring your freshly picked strawberries to the next level. Spread it on toast, add it to a smoothie, make it into an ice pop, pour it over ice cream or yogurt or their vegan alternatives, swirl it into granola, spread it on pancakes or waffles, pour it over pound cake or cheesecake or add it to a cocktail.

Equipment

  • Medium saucepan
  • Wooden spoon
  • Potato masher or fork

Ingredients

  • 1 pound strawberries stems removed and sliced
  • 2 Tablespoons maple syrup
  • pinch salt

Instructions

  • Add the sliced strawberries, maple syrup and a pinch of salt to a medium saucepan. Stir to combine.
  • Cook on medium high heat until the mixture is bubbly, stirring often to avoid burning the syrup.
  • Reduce the heat to medium and continue cooking until the fruit has softened, about 5-10 minutes. Stir frequently.
  • Remove from the heat and mash the fruit with a potato masher or fork until it reaches the consistency that you desire.

Ingredients For Strawberry Compote
  • Strawberries(1 pound)
  • Maple syrup(2 Tablespoons)
  • Pinch of salt

THAT’S IT!

Let’s Get Going…

Add the sliced strawberries, maple syrup and a pinch of salt to a medium saucepan. Stir to combine.


Cook on medium high heat until the mixture is bubbly stirring often to avoid burning the syrup.

Reduce the heat to medium and continue cooking until the fruit has softened, about 5-10 minutes. Stir frequently.


Remove from the heat and mash the fruit with a potato masher or fork until it reaches the consistency that you desire.

When picking your own strawberries, choose ones with a sweet and strong smell.

Strawberries taste sweeter at room temperature.

Avoid washing strawberries until ready to eat them. The will spoil faster if washed and stored.
