Tandoori Chicken is named for the cylindrical clay oven called a tandoor in which it was traditionally prepared over hot coals. Although the classic recipe wasn’t popularized until the 1940s, remains of what resembled the tandoor oven and charred chicken bones have been found dating back to 3000 BC.

Most of us don’t have tandoors, but we can still prepare a great tasting and beautifully red-orange Tandoori Chicken either in an oven or on a grill. I love this dish as an appetizer prepared on short wooden skewers, but it’s also a great entree served over brown rice or with Naan to soak up the flavorful sauce.

Tandoori Chicken

Equipment

  • 2 Medium bowls One for the marinade and one to soak the skewers.
  • 1 Whisk
  • 1 Small skillet
  • 1 Wooden spoon
  • 1 oven safe cooling rack
  • 1 stainless steel sheet pan
  • 12-15 Wooden skewers You can also use metal skewers if desired.

Ingredients

  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon turmeric
  • ½ teaspoon cayenne
  • 1 Tablespoon garam masala
  • 1 Tablespoon paprika
  • ½ teaspoon ground ginger
  • 2 Tablespoons avocado oil
  • 1 Tablespoon minced garlic about 3-4 cloves
  • 1 ½ cups plain non-fat yogurt
  • 2 Tablespoons freshly squeezed lemon juice
  • 1 teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper
  • 1 ½ pounds boneless, skinless chicken thighs
  • freshly chopped cilantro for garnish optional

Instructions

  • Place the wooden skewers in a bowl of cold water until ready to thread the chicken. This will prevent the skewers from cooking and catching fire.
  • Whisk together the cumin, coriander, turmeric, cayenne, garam masala, paprika and ginger in a medium bowl.
  • Heat avocado oil in a small skillet on medium heat.
  • Once the oil is hot, stir in the mixed spices with a wooden spoon and continue stirring for 2-3 minutes..
  • Add the garlic and stir for another 30 seconds.
  • Remove skillet from the heat and allow to cool.
  • Whisk together the cooled spice mixture, yogurt, lemon juice, salt and pepper in the bowl used to mix the spices.
  • Remove ½ cup of the marinade from the bowl to a small storage container, cover and refrigerate.
  • Cut the chicken into 1 inch square pieces
  • Add the chicken to the bowl with the remainder of the marinade and stir to coat each piece.
  • Cover the chicken and chill for 6-8 hours.
  • Heat the oven to 500 degrees F.
  • Thread the chicken onto wooden skewers. Add three to four pieces to each skewer.
  • Place an oven-safe cooling rack inside a stainless steel sheet pan.(You can also use a broiler pan for this.)
  • Lay the chicken skewers, well separated, on the cooling rack over the sheet pan.
  • Roast until the chicken reaches an internal temperature of 175 degrees F.
  • Serve the tandoori skewers as appetizers or over whole grain rice for a meal.
  • Garnish with freshly chopped cilantro, if desired.

You’ll need the following ingredients for this Tandoori Chicken…

Ground cumin-1 teaspoon
Ground coriander-1 teaspoon
Turmeric-1 teaspoon
Cayenne-½ teaspoon
Garam masala-1 Tablespoon
Paprika-1 Tablespoon
Ground ginger-½ teaspoon
Avocado oil-2 Tablespoons
Garlic-about 3-4 cloves
Plain non-fat yogurt-1 ½ cups
Freshly squeezed lemon juice-2 Tablespoons
Kosher salt-1 teaspoon
Freshly ground black pepper-½ teaspoon
Boneless, skinless chicken thighs-1 ½ pounds
Cilantro for garnish, optional

Tandoori Chicken Ingredients

Let’s get going…

Place the wooden skewers in a bowl of cold water until ready to thread the chicken. This will prevent them from cooking and catching on fire during the cooking process.

Whisk together the cumin, coriander, turmeric, cayenne, garam masala, paprika and ginger in a medium bowl.


Heat avocado oil in a small skillet on medium heat.


Once the oil is hot, stir in the mixed spices with a wooden spoon and continue stirring for 2-3 minutes.

Add the garlic and stir for another 30 seconds. Remove the skillet from the heat and allow it to cool.


Whisk together the cooled spice mixture, yogurt, lemon juice, salt and pepper in the bowl used to mix the spices.

Marinade


Remove ½ cup of the marinade from the bowl to a small storage container, cover and refrigerate.


Cut the chicken into 1-inch square pieces.


Add the chicken to the bowl with the remainder of the marinade and stir to coat each piece.


Cover the chicken and chill for 6-8 hours.

Heat the oven to 500 degrees F.


Thread the chicken onto wooden skewers. Add three to four pieces to each skewer.


Place an oven-safe cooling rack inside a stainless steel sheet pan.(You can also use a broiler pan for this.)


Lay the chicken skewers, well separated, on the cooling rack over the sheet pan.
