VEGAN CHIPOTLE SOUR CREAM

I continue to try to keep an open mind, but I’m not a big fan of “alternatives” to my old favorite foods like sour cream and butter. This Vegan Chipotle Sour Cream turns out to be a delicious substitute. Enjoy this spicy, creamy sour cream alternative as a garnish for your tacos, burritos and enchildas or as a dip for your chips.

Vegan Chipotle Sour Cream

Enjoy this spicy, creamy sour cream alternative as a garnish for your tacos, burritos and enchildas or as a dip for your chips.

Ingredients

  • 16 ounces firm tofu drained and patted dry with a paper towel
  • 2 cloves garlic
  • 2 Tablespoons lemon juice
  • 1 Tablespoon red wine vinegar
  • 1 Tablespoon chipotle in adobo sauce
  • 2 Tablespoons lime juice
  • ½ teaspoon cumin
  • 1 teaspoon kosher salt
  • water, as needed

Instructions

  • Place all of the ingredients in a blender or food processor and blend until smooth. Add water a teaspoon at a time to reach the desired consistency. I generally don't add additional water, but you may prefer a thinner sour cream, and if so, add water as directed.
  • Use immediately or if stored in the refrigerator, stir until the sour cream is smooth.

Leftover Chipotle Peppers In Adobo Sauce?


Usually a recipe will ask for a small amount of the peppers or sauce, and you will be thinking, what do I do with the leftovers? To save them for future use, place the remaining peppers and sauce in a blender and blend until smooth. Line a baking sheet with parchment or wax paper and dollop the sauce by tablespoons and/or teaspoons onto the pan. Freeze the sauce and once frozen, place the measured amounts into an airtight container or plastic freezer bag. When a recipe calls for chipotle peppers in adobo, you can remove the dollops from the freezer in the quantity needed and defrost or if appropriate, just add the frozen dollops directly to your cooking. They melt quickly. ***


***Word to the wise……always label your freezer containers, both so you can easily be reminded of what’s inside and in this case, so that no one in your family grabs a dollop of chipotle thinking it’s a chocolate cookie. Trust me, I know this from personal experience.


Garlic


Most recipes including this one measure garlic by cloves. There can be a very big difference in size from one garlic clove to the next. Experiment with the amount of garlic that you enjoy in your cooking, and adjust the amount used accordingly. Here’s a picture of cloves from one head of garlic to illustrate this point.

Lemon Juice


Fresh lemon juice is a must for this recipe. Lemons can be expensive, so you want to get as much juice out of them as possible. There are a number of ways to do this, but the quickest and my favorite way is to heat whole lemons in the microwave for about 20 seconds. Be careful not to overheat the lemon or the juice will literally spill out of the pores.


Some recipes list whole or parts of lemons as ingredients. I prefer not to do that because each lemon can produce a significantly different amount of juice. If you google how much juice is in a lemon, you’ll find anywhere from 3-5 tablespoons. If this recipe requested 3 lemons, those lemons could produce as much as 15 Tablespoons to as little as 9 Tablespoons of lemon juice. 15 Tablespoons is a little under a cup of juice and 9 Tablespoons is a little over a half cup of juice.


If you have leftover juice, you can store it in the refrigerator for 2 or 3 days, but it does not stay fresh for long, so if you aren’t planning to use it, freeze it in ice cube trays, and once frozen, add the lemon cubes to a freezer bag or freezer safe container and store in the freezer until you’re ready for lemon juice again.

Lime Juice

Just a squeeze of lime juice can add brightness to many recipes. Bottled lime juice does not live up to the taste of freshly squeezed and often has added ingredients.. Some recipes list whole or parts of limes as ingredients. Generally one average lime produces 2 Tablespoons of juice, but this can vary from lime to lime.

Although you can use a reamer or a juicer to juice a lime, one quick way to get the most juice from a lime is to place it in the microwave for 20-30 seconds, allow it to cool for about a minute and then juice it with the reamer, the tines of a fork or a juicer. Another option to get more juice from a lime is to roll it over the countertop with the palm of your hand briefly before juicing.
